FARMING OF THE GRAPES
This wine is obtained by a careful selection go grapes grown in hilly terrain with medium texture land and at an altitude of 150-200 m.a.s.l..
The farming system is composed by guyot and spurred cordon and the density of cultivation is 5.000 vines/hectare with a yield of produ ct of 50 qq/ha.
The harvest takes place during the month of September.
TYPE OF GRAPES
Cabernet Sauvignon 7%
The grapes are harvested by hand and conferred to the winery in September; there follows the de- stemming and soft pressing,The vilification is carried out in steel vats with maceration on the skin for about 15 days, with frequent pumping over and aeration to foster ceding of the color .
The wine is aged in large Slavonian oak barrels of 25 Hl for 24 months;It is then botlled for a further aging of 6 months minimun.
FEATURES AND COMBINATIONS
The color is an intense ruby red with hints of garnet, the aroma is elegant and lingering, evoking red berries combined with pleasing overtones of wood.The taste is en excellent balance between alcohol and gentle tannins. Austere and elegant.

It goes with red meat and seasoned cheese.
