Nose: Intense and pleasant, fresh and fruity aromas (raspberry, green apple and ananas).
Mouth: A soft and pleasant texture in mouth and a persistent freshness.
Pairing: Sea food, vegetables pie, dessert (e.g. pannacotta, jam tarts).
The Cava d’Onice Rosato 2018 is obtained by the direct pressing of the Sangiovese grapes. The second step of the process is characterised by a slow fermentation without peels and a temperature below the 15°C. The bottling happened before the Christmas time.
