Wine for first courses (dry pasta and risotto) with vegetable and fish-based sauces. Excellent pairings with main courses of fish, shellfish, and cod. Also excellent as an aperitif.
It reaches the apex of the grape variety's expression in the first two years and then elegantly evolves for a time that can easily exceed five years in the bottle.
With a short cold maceration followed by soft pressing at low temperature under an inert cover to protect the qualitative potential of the grapes from oxidation. Fermentation at low temperature (15-18 °C) to favor the development and conservation of the most characteristic varietal aromas.
