23 Settembre - A grape that, bred on espalier vines more than 20 years old, reaches perfect ripeness with intact and dry fruit. In fact, after reaching maturity, in the first ten days of October, the bunches undergo the twisting of the stalk, without detaching them from the plant. The grapes are then left for a few more days attached to the branch. Doing so robs the berries of the chance to continue to feed and grow, forcing them to wither away caused by the dryness of the sun and air.
By wilting, the grain will concentrate sugars and aromatic substances, giving rise to a "Meditation Wine," Sept. 23.
The ideal pairing is with intense and succulent red meats, first courses with decisive and slightly spicy sauces, cheeses and flavourful cured meats.
