Brunello Di Montalcino DOCG 'Sensis'

This wine comes from the stubbornness of Simone, who had set out to create his own wine for a long time. Thus, in 2005, the Brunello di Montalcino Cava d'Onice was born, which will later give its name to the company. The name is a tribute to the ancient onyx quarry, from the Etruscan age, located near the Abbey of Sant'Antimo.

TASTING NOTES:

Color: intense ruby ​​red, rather deep, brilliant.
Nose: the aromatic baggage is intense, where the hints of ripe fruit, especially plum and blueberry, give way to complex mineral and balsamic notes.
Mouth: very balanced in the mouth, with a solid and balanced body with the tannic fraction which is also well blended with the other components. long finish.
Pairing: hare pappardelle, Brunello risotto, stewed wild boar and game in general, braised veal or pork and aged cheeses.
