Notes: The perfume is characterized by notes of apricot, yellow peach, peat. almond, mountain grass and ginger. The taste reveals apricot and malt, closing the sensation of river stone and therefore minerality and intense yellow fruit.
Fòja (from the Solopachese dialect) means impetus, passion, energy and everything that inexorably burns. It represents the commitment that winemakers put into the cultivation of the land. Greco is a vigorous, strong vine and it expresses this quality also in the glass, so much so that it is defined as "a red dressed as white".
Vinification & Ageing : The grapes are harvested by hand and transferred to the cellar; followed by destemming and soft pressing, preceded by cryomaceration in the press under a flow of inert gas to avoid oxidation of the must. After 24 hours of static decantation, the clear part of the must is decanted and inoculated with yeast strains that respect the primary aroma, i.e. varietal of Greco. The wine thus obtained remains on the fine lees until the month of February, after which it is decanted, filtered and bottled in the first ten days of March.
Recommended pairings: dishes based on fish and shellfish, seafood, risottos or first courses from the sea and land, but also white meats such as stewed rabbit.
