Notes: The perfume is characterized by notes of pear, hazelnut, broom, pineapple, almond, acacia honey, gunpowder and smoky scents. On the palate the hints of pear and linden dominate, pleasant almond notes.
Òria (from the Solopachese dialect) is the light morning wind. The Fiano vineyards are found mainly in hilly terrain where the winemakers are caressed by this pleasant and light breeze.
Vinification & Aging: The grapes are harvested by hand and transferred to the cellar; followed by destemming and soft pressing, preceded by cryomaceration in the press under a flow of inert gas to avoid oxidation of the must. After 24 hours of static decantation, the clear part of the must is decanted and inoculated with yeast strains that respect the primary aroma, i.e. the varietal of Fiano. The wine thus obtained remains on the fine lees until the month of February, after which it is decanted, filtered and bottled in the first ten days of March.
Pairings: recommended with well-structured fish-based dishes and white meats, seafood and vegetable risottos.
