Winemaking: The grapes are harvested by hand and checked at the winery. Afterwards, the beans are destemmed and gently pressed. Vinification takes place with maceration of the skins with pumping over; Fermentation takes place in stainless steel tanks at a controlled temperature.
Maturation: Finally, the wine ages in large Slovenian oak barrels for at least 18 months. Aging continues in the bottle.
Color: ruby red
Nose: Aromas of ripe red fruit and wild berries.
Serving Temperature: Serve at 18°C
Characteristics / Harmonization: The aging in wood gives it a great smoothness in the mouth with balanced tannins. Harmonizes with pasta, risotto, red meat, lamb and pork.
Particularities: This wine belongs to the great tradition of Solopaca wines, which has its roots in history. It is a red wine obtained from Aglianico and Sangiovese grapes, grown in limestone clay soils, at an altitude situated between 200 and 350 meters, in a small area of Solopaca, on the slopes of the Taburno-Camposauro Regional Park. The cultivation system is of the espalier type, with a production of 100 qq/ha and average age between 10 and 25 years. The harvest takes place from the month of October.
