Roller crushing and destemming of the dried grapes. Fermentation in steel at controlled temperature. Long ageing in oak barrels and long bottle maturation.

Pairing: Very mature and strong, full-flavoured cheeses accompanied by honey or mostarda (Italian chutney), dry desserts, chocolate biscuits. A conversation wine.
